The food we think of as traditional is often surprisingly young, and frequently borrowed from far away. The chilli pepper, essential in much of Indian and Thai cuisine, followed a similar path across the oceans before becoming impossible to imagine those kitchens without. Even the potato, a staple across northern Europe, once seemed strange and foreign. These journeys remind us that national dishes are rarely pure inventions; they are the results of trade, migration, and centuries of experiment. When we sit down to a meal we call our own, we are usually tasting a long history of contact between distant peoples. In that sense, the most local plate on the table often carries a deeply international story.
